Why do beer breweries use reverse osmosis systems?
An RO system removes impurities, contaminants, pollutants, minerals, salts and just about everything else in the water. With a commercial reverse osmosis system, a brewery can take the incoming tap water they've got, strip it down to almost pure water, and build it back up to their exact specifications -Imagine RO water as a blank canvas, leaving room for commercial brewers to craft their beer into an "artisan" product, with flavors based on their preferences.
Whether or not to use RO water for your brewery is a personal choice. In most cases it’s advisable to have a degree of water treatment in your brewing process, as leaving excess minerals and sediments in the mix can lead to undesirable bitter, sour, and off flavors. RO treated water leaves you with purified water with neutral qualities. Untreated, the result with RO water can make a clean, light lager. If you are looking to make other types of beer, RO water gives you complete control over the process.

What is reverse osmosis?
To understand what Reverse Osmosis is you first need to understand osmosis. In simple terms, osmosis is the movement of a solvent, for example, water through a semi-permeable membrane from a region of lower concentration to a region of higher concentration to achieve balance on both sides of the membrane. This movement occurs naturally without any energy being applied. To stop this natural process from occurring you need to apply pressure to the higher concentration side of the membrane. The osmotic pressure is the pressure difference needed to stop this natural flow of the solvent across the semi-permeable membrane.
For reverse osmosis to occur, you apply a pressure that is higher than the osmotic pressure. This forces the solvent through the semi-permeable membrane in the opposite direction to that which occurs naturally with osmosis, leaving any impurities behind. The water passing through the membrane is referred to as the “permeate” (or product water) the remainder is referred to as “concentrate” (or reject/drain water). As the RO membrane only allows a minute amount of salts in the feed water to pass through, the conductivity of the permeate is very low, whereas the concentrate is very high in dissolved salts.
To achieve reverse osmosis in a craft beer application setting you need to buy a suitable reverse osmosis system. An RO system is an efficient water purification system and is usually a self-contained unit. Using an RO system you can effectively remove many different impurities and chemicals from water (approximately 95%-99% of contaminants)

How do I know if need an RO system for my brewery?
Basically, if you need water to be of a higher quality than your city's water supply or private well water, then an RO system might work for you. As there are many different RO water filters to choose from, it is worth having your water analyzed. Before you purchase any reverse osmosis water filter for your brewery we recommend that you obtain a water quality test report for your water supply, which will help identify any issues that are essential to deal with and those you may wish to improve. What size reverse osmosis system do I need for my brewery?
5bbl: A brew house capacity of 5 bbl (155 gallons) is the main requirement. It depends on how many batches you plan to run through the brew house per day (8 hour shift generally). If you will be running one batch per day at most then our 400gpd Brew Master RO system with a 300gal storage tank would be appropriate. It would take about 13-15 hours to fill the 300 gallon tank so if it were started the night before you would have 300 gallons at the start of the day.
10bbl: The brew house capacity of 10 bbl (310 gallons) is the main requirement. It depends on how many batches you plan to run through the brew house per day (8 hour shift generally). If you will be running one batch per day at most then our 800gpd Brew Master RO system with a 300gal storage tank would be appropriate. It would take about 10-11 hours to fill the 300 gallon tank so if it were started the night before you would have 300 gallons at the start of the day. If you ever needed to run two batches per day you could upgrade to our 1,200gpd Brew Master RO system which will fill the storage tank in about 6 hours running.
15bbl: The brew house capacity of 15 bbl (465 gallons) is the main requirement. A lot depends on how quickly you need to make all or part of that capacity. Our 1,200 GPD Brew Master RO system makes about 50 GPH so if you use a 200 gallon storage tank and start with that tank full, the 1,200 GPD system plus the 200 gallon tank would deliver the 465 gallons in one 8 hour shift. That would allow you to double capacity with a second 8 hour shift if necessary.
20bbl: The brew house capacity of 20 bbl (620 gallons) is the main requirement. A lot depends on how quickly you need to make all or part of that capacity. Our 1500 GPD Brew Master RO system makes about 62.5 GPH so if you use a 300 gallon storage tank and started with that tank full the 1500 GPD system plus the 300 gallon tank would deliver around 620 gallons in one 8 hour shift. That would allow you to double capacity with a second 8 hour shift if necessary.
